Grill chops 3 to 4 minutes per side, or until cooked through. Cook on low for 7 hours or high for 4 hours. Season and rub chops with sage, paprika, salt and pepper. In a bowl whisk together the brown sugar, salt, black pepper, garlic powder, barbecue sauce, Worcestershire sauce and the applesauce. Add pork chops to crock pot or slow cooker. Check for doneness, depending on the size of the chops you may need to cook an additional 15 minutes. Stir together coriander, cumin, salt and pepper in a small bowl, then add oil and stir until combined well.
